We have been in the midst of a wild heat wave in the South. It’s been too hot even to grill – I feel badly sending hubby out there over a 400 degree grill in this heat. We’ve been using the slow cooker again and doing a lot of cook once – eat twice style meals. Really, nothing too fancy. We are supposed to get a short break in the weather early this week and I am looking forward to not being hunkered down inside.
- Fish with Tomatoes, Olives, and Capers served with orzo pasta
- Homemade Pizza with green salad
- Meatloaf Cups, mushroom gravy, creamed corn, sliced garden fresh tomatoes
- Orange-Apricot Chicken in slow cooker (adapted from this amazing recipe), rice, broccoli, carrots
I had a wonderful time today baking some of our favorites to restock the freezer too. I am back to feeling confident and (somewhat) in control of the kitchen again. Now … if only I could keep up on laundry, and cleaning, and exercising, and on and on and on …
