Sunday – Steak, Baked Sweet Potatoes, Green Beans

Monday – Chicken Tacos with refried black beans and all the fixings

Tuesday – Hot Brown Sandwiches with Honey and Cinnamon Glazed Carrots

Wednesday – White Bean and Kale Soup (will be adding sausage)

Thursday – HAPPY THANKSGIVING

Friday – Day After appetizers and Christmas decorating; we are taking Hot Crab Dip, veggies and dip, and King’s Hawaiian rolls for leftover turkey sliders

Sunday – Chicken Pot Pie (make 1, freeze 1)

Monday – White Chicken Enchiladas with a tomato and avocado salad

Tuesday – BLT sandwiches with oven roasted potatoes

Wednesday – Caribbean Jerk Chicken with Glazed Sweet Potatoes

Thursday – Potato, Corn, and Carrot Chowder

Friday – Pizza night!

Saturday – at Mom and Dad’s

Menu Plan – Week of March 19

It’s getting warm here in the South.  We are anticipating temperatures in the upper 70’s all week.  That means a return to lighter, simpler fare at out house.  One of my goals this Spring and Summer is to find ways to make meal preparation more simple in the evenings.  Being back at work full time for almost years, you’d think I would have a system down.  Yet, 5:15 is often upon us and I am scrambling.  I hope to try some new recipes and techniques and will be glad to share what I learn (and what flops!).

Dinner:

  • Cheddar Polenta Croquettes with field greens and broiled asparagus
    • I will make the polenta one night after dinner and allow it to cool.  That way, all I have to do when ready to eat is pan fry it and broil the asparagus.
  • Butternut Squash Tacos, Refried Beans
    • I plan to make the big batch of beans, portion and freeze.  Also, I’ll peel and cut the squash the night before.
  • Spaghetti Pie with homemade sauce, green salad
  • Tomato Basil Soup with grilled cheese sandwiches

Not Dinner:

Breakfast:

Chai Latte

Pumpkin Gingerbread Smoothies (a daily indulgence!)

Gingerbread Waffles

Orange Sticky Cake (going for mom of the year award!)

Bacon Cheddar Biscuits (recipe to follow)

Dinners:

Butternut Squash, Kale, and (Soy) Sausage Minestrone

Enchiladas with Avocado Cream sauce (adaptation from this recipe)

Quiche with mixed green salad

Spaghetti Pie with mixed green salad

Mushroom Lasagna with mixed green salad

Chicken Pot Pie with mixed green salad

Tomato Basil Soup with grilled cheese sandwiches

Curried Lentil Soup with Chickpea Puree

Pan fried chicken, Cheddar Scallion Polenta Croquettes, and mixed green salad

Black Bean and Sweet Potato Chili

Black bean tostadas

Black Bean Burgers served with homemade coleslaw

Pinto Beans and Rice served with cornbread and maybe coleslaw

Turkey Meatballs with grape jelly and chili sauce served with egg noodles and green beans

Beer Cheese Soup (sans sausage)

Toscano Soup (essentially this soup with soy sausage added) with Italian Cheese Bread

Tortellini, Peppers, and Spinach

Creamy Tomato Barley Risotto

Homemade pizza and salad (a Friday night staple, so this knocks out 4 meals)

Breakfast for Dinner (at least 3 times a month)

October Menu Plan

October is probably my favorite month of the year.  The weather here in the South is finally turining toward Autumn, little man’s birthday is this month, college football is in full swing, and it just feels right to braise, roast, and slow cook.  We are continuing on with more vegetarian meals and have started to feel a lot better.  We all have more energy and are sleeping far better.  DH will get a cholesterol recheck in a few months, so that will be the true measure.  The month ahead will be a busy one as soccer continues and we all adjust to little man starting kindergarten.  I am looking for frugal, comforting meals and I think I have found some.  Many are new, some are variations of fall favorites.  I will try to be more consistent about posting the recipes and reviews.

September Menu Plan

DH discovered the most amazing “box” a few months back.  It’s a Western Digital box that he hooked to the TV in the living room.  It streams Netflix, Pandora, Hulu, and many other internet media sources.  Since we were in the midst of the summer TV slump, and not much on TV was little-man appropriate, we started watching oodles of Netflix.  We made it though 70+ episodes of X-Men Evolution in a few weeks, have watched the whole series of The Avengers, and are now on to Power Rangers.  Did you know there are about a dozen different PR series?  Yep, there are!  And little man loves the m all.  Cheesy 90’s TV has been introduced to our little one born in 2005 and he LOVES it.

After little man heads off to Land of Nod, DH and I have been getting all educated watching food documentaries.  Think Food, Inc., Fat Sick and Nearly Dead, and my personal fave, Ingredients.  We have been appalled by what we’ve seen and are making some changes.  We have started eating vegetarian several nights a week.  I’m not opposed to meat, but we don’t crave it anymore.  I will be diligent about using up what is in the freezer, I can’t stomach the thought of wasting any food.  But, moving forward, meat purchases will be few and far between.  Getting our 5 year old son into the routine is proving far more difficult.  We are definitely learning patience and leading by example.  One meal at a time, right?

Dinners:

  • Portobello mushrooms stacks with fresh mozzarella, homemade pesto, and garden fresh tomatoes with a green salad
  • Quiche with mushrooms, green peppers, onions, and broccoli with a green salad
  • Mushroom Alfredo with salad
  •  Quinoa and Black Beans
  • Long Weekend Grilled Salad
  • Bean and Potato Tacos
  • Homemade Pizza – we had gotten away from this, but have found a new love for it when topped with mushrooms, roasted peppers, Kalamata olives, turkey pepperoni, and fresh mozzarella cheese.  Totally decadent!  We’ll be having pizza most Friday nights.
  • Lazy Chiles Rellenos with corn tortillas and fruit
  • Roasted chicken with carrots, onions, and potatoes; green beans
  • Quesadillas – we’ll use the leftover chicken and then probably have black bean & corn at least one other time this month
  • Black bean burritos with brown rice
  • Veggie stir fry with brown rice
  • Spicy Honey Chicken with coleslaw and pasta salad
  • Vegetable egg rolls with Asian style slaw
  • Broccoli and Three Cheese Soup with some sort of yummy bread

 

I know that’s not 30 meals, but it’s a good start!

Menu Plan – w/b July 25

We have been in the midst of a wild heat wave in the South.  It’s been too hot even to grill – I feel badly sending hubby out there over a 400 degree grill in this heat.  We’ve been using the slow cooker again and doing a lot of cook once – eat twice style meals.  Really, nothing too fancy.  We are supposed to get a short break in the weather early this week and I am looking forward to not being hunkered down inside.

Weeknight Dinners:

I had a wonderful time today baking some of our favorites to restock the freezer too.  I am back to feeling confident and (somewhat) in control of the kitchen again.  Now … if only I could keep up on laundry, and cleaning, and exercising, and on and on and on …
